Biba's Minestrone Soup Recipe

  1. Heat chicken broth.
  2. Heat oil in a large saucepan.
  3. Add parsley and garlic.
  4. Saute over med.
  5. heat.
  6. Before garlic changes color, add pancetta.
  7. Saute until lightly browned.
  8. Stir in cabbage.
  9. Cover and cook 1 to 2 minutes.
  10. Add remaining vegetables to saucepan.
  11. Cover and cook about 5 minutes.
  12. Add broth and ham shank.
  13. Cover and reduce heat.
  14. Simmer about 40 to 50 minutes.
  15. Remove half of the vegetables with a slotted spoon and place in a blender until smooth.
  16. Return ingredients to the saucepan.
  17. Season with salt and pepper.
  18. Serve hot with parmesan cheese and thick slices of french bread.
