Real Cajun Beans and Rice

  1. Wash beans and soak overnight in water to cover, about 2 quarts, adding salt to taste.
  2. Cook beans in salted water slowly for 45 minutes.
  3. Add vegetables, shortening, seasonings, tomatoes and tomato sauce.
  4. Cook slowly another hour, stirring occasionally.
  5. Add sausage and cook for 45 minutes more.
  6. Cool but do not refrigerate -- no more than 1 hour.
  7. Reheat and bring to boil, lower heat and simmer gently 30 or 40 minutes.
  8. Serve over hot fluffy rice.
