Texas Beef Puff
- 12 lb lean ground beef
- 12 cup onion, chopped
- 1 (8 ounce) package reduced-fat cream cheese
- 12 cup water
- 1 (4 ounce) can green chilies, chopped
- 12 teaspoon salt
- 1 teaspoon chili powder
- 12 teaspoon dried oregano leaves
- 14 teaspoon ground cumin
- 2 eggs, beaten
- 34 cup unbleached all-purpose flour
- 12 teaspoon salt
- 34 cup reduced-fat milk
- 1 tablespoon yellow cornmeal
- 12 cup cheddar cheese, shredded
- 12 cup fresh tomato, diced
- Brown meat; add onion cook until tender, about 5 minutes.
- Add cream cheese and water; stir over low heat until cream cheese is melted.
- Stir in peppers, salt, chili powder, oregano and cumin.
- In a medium-sized bowl, combine eggs, flour, salt and milk; beat until smooth.
- Pour mixture into prepared pan.
- Sprinkle with cornmeal; spoon meat mixture evenly over top.
- Bake at 400 for 35 minutes.
- Sprinkle with diced tomatoes and cheese.
- Top each serving with sour cream, if desired.
