Steamed Lobster With Green Mayonnaise

  1. In a large kettle heat water, salt to taste, peppercorns, bay leaf, thyme and red pepper flakes to a full rolling boil.
  2. Add lobsters and cover.
  3. Once water returns to a boil, let cook 12 minutes.
  4. Meanwhile, put the egg yolk in a mixing bowl.
  5. Add vinegar, mustard, salt and pepper.
  6. Whisk and gradually add 1 cup oil until thickened (like mayo).
  7. In a food processor or blender combine watercress, parsley, dill and 1 tablespoon of oil.
  8. Puree and add to mayonnaise.
  9. When lobsters are done, remove and hang by tail to drain.
  10. Split the cooked lobsters lengthwise, discard the tough sac near the eyes.
  11. Arrange the halves on four platters and garnish with additional parsley.
  12. Serve with green mayonnaise.
