Fresh Brussels Sprouts & Italian Style Tomatoes

  1. Remove outer layer of leaves from Brussels sprouts.
  2. Trim the stems to a bare minimum (taking care not to slice stem so close that the sprouts fall apart as they cook).
  3. Place Brussels sprouts and water in a large microwavable bowl; cover with vented plastic wrap.
  4. Microwave on HIGH 7 min.
  5. or until sprouts are tender.
  6. Plunge sprouts immediately into ice water.
  7. Mix tomatoes and onion in a large microwavable bowl.
  8. Microwave, uncovered, 6 min.
  9. or until onion is tender and tomatoes are heated through.
  10. Cut Brussels sprouts in half and add to tomato mixture; stir.
  11. Cover with plastic wrap.
  12. Microwave 3 min.
  13. or until Brussels sprouts are hot.
  14. Sprinkle with cheese; cover.
  15. Let stand 1-2 min.
  16. or until cheese is melted.
