Pepper Steak

  1. While rice is cooking, pound steak to 1/4-inch thickness.
  2. Cut into 1/4-inch strips.
  3. Sprinkle meat with paprika and allow to stand while preparing other ingredients.
  4. Brown meat in margarine. Add garlic and broth.
  5. Cover and simmer for 30 minutes.
  6. Stir in onions and peppers.
  7. Cover and cook 5 minutes more.
  8. Blend cornstarch, water and soy sauce.
  9. Stir into meat mixture.
  10. Cook, stirring, until clear and thickened, about 2 minutes.
  11. Add tomatoes and stir gently.
  12. Serve over rice.
  13. Makes 6 servings.
