Edam and Bean Wraps

  1. Deseed and dice the pepper, drain and rinse the beans.
  2. In a bowl, mix them with the sweetcorn and salsa.
  3. Arrange some of the lettuce over the base of a tortilla.
  4. Spoon some of the bean mixture onto the top of the centre of the tortilla, then top with a handful of Edam.
  5. Spoon 1 tbsp yoghurt on top.
  6. Carefully roll up the tortilla, tucking in the ends as you go and cut in half on the diagonal.
  7. Repeat with the remaining tortillas and filling.
