Saucy Caesar Chicken
- 1 tablespoon olive oil
- 4 -6 chicken breasts
- 1 cup caesar salad dressing (Kraft, creamy variety)
- 1 cup chicken broth
- 1 teaspoon dried basil (or 1 Tbs fresh)
- 3 small tomatoes, chopped (seeded if desired)
- 2 tablespoons bacon bits
- 1 12 cups uncooked rice
- 1 tablespoon water
- 1 tablespoon cornstarch

- Heat olive oil in a large skillet over med-high heat.
- Cook chicken breasts for about 5 minutes on each side.
- They should be slightly browned.

- Mix together dressing and chicken broth and pour over chicken.
- Add Basil.
- Bring this to a simmer and cook for about 3 minutes.

- Add tomatoes and bacon bits, cook for another 2 or 3 minutes.
- 4.
- Mix water and cornstarch together and then add to chicken and sauce to thicken a little bit.
- 5.
- Serve over hot rice.
