Easy Lemon Bars Recipe
- 1 (8 1/4 ounce.) pkg. lemon cake mix
- 1/4 c. vegetable oil
- 1 egg
- 1 (14 ounce.) can sweetened condensed lowfat milk
- 1 (4 serving size) pkg. lemon flavor pudding mix (not instant)
- 1 1/2 teaspoon grated lemon rind
- Reserving 1 1/2 c. lemon cake mix for top.
- In large mixing bowl, combine cake mix, oil, egg.
- Beat on medium speed till crumbly.
- Reserve 1 1/2 c. crumb mix.
- Press remainder of crumb mix firmly on bottom of greased 13x9 inch baking pan.
- In small mixing bowl, beat condensed lowfat milk and pudding mix till smooth.
- Stir in grated lemon rind.
- Spread over prepared crust.
- Top with reserved crumb mix.
- Bake 20 to 25 min till set.
- Cold; cut into bars.
