Peanut Butter Soup
- 12 lb ground beef
- 1 tablespoon vegetable oil
- 1 small onion, chopped fine
- 1 stalk celery, chopped fine
- 2 carrots, diced 1/4 inch
- 2 medium potatoes, cubed
- 1 cup smooth peanut butter
- 2 boneless beef cubes
- 1 (1 lb) can tomato paste
- 12 cup peanuts
- 4 cups water
- salt and pepper
- Brown the beef in vegetable oil.
- Add the next 4 ingredients and brown.
- Add remaining ingredients and bring to a boil.
- Reduce heat to medium low and simmer for 1/2 hour or until the potatoes are fork tender.
