Easy Fajitas

  1. In a large resealable bag, place meat, Tequila, 1/4 C olive oil, horseradish, liquid smoke, basalmic vinegar, 2 cloves garlic, adobo, oregano, brown sugar, liquid smoke, chopped jalapeno, and lemon juice.
  2. Marinate meat overnight, turning once.
  3. Reserve marinade.
  4. Grill meat over medium hot coals about 4 minutes per side.
  5. Take meat off grill and let rest 10 minutes before slicing into strips about 1 inch wide.
  6. Pour marinade into a skillet on the stovetop and add veggies and 1 T olive oil.
  7. Saute until crisp tender, about 6-8 minutes.
  8. For sauce:.
  9. Mix sour cream, 1 clove garlic, cumin, and 2/3 C picate sauce in a small bowl.
  10. Heat 12 flour tortillas in the microwave until just warm.
  11. Serve flour tortillas with veggies, picante/sour cream sauce, avocados, tomatoes, lettuce, and cheese.
  12. Guests can build their own mini-fajita.
