Butternut Squash and Yams in Coconut Milk from West Africa

  1. Fry onion in skilled until tender.
  2. Stir in all other ingredients and heat to a boil.
  3. Reduce heat, cover and stir occasionally.
  4. Cook until vegetables are tender.
