Pasta with Sausage Marinara Sauce
- 1 package Penne Pasta, 16 Ounce Package
- 2 cans (14 Oz. Size) No Salt Added, Diced Tomatoes
- 3 cloves Garlic
- 1/4 cups Diced Red Onions
- 1 Tablespoon Olive Oil
- 1 package 4 Count - Tomato Garlic Chicken Sausages (Trader Joes)
- 5 leaves Fresh Basil
- 1/4 cups Diced Red Bell Pepper
- 1 sprig Rosemary - Stripped
- 1 teaspoon Dried Thyme
- 1 teaspoon Dried Oregano
- 1 teaspoon Kosher Salt And Pepper To Taste
- Boil a pot of water enough to cover the depth of your pasta.
- Add pasta to boiling water and simmer till al dente.
- After draining pasta, toss with a little olive oil to keep pasta from sticking.
- For the sauce: Empty the 2 cans of diced tomatoes into a food processor and go get your garlic.
- Break out 3 cloves of garlic.
- Add the garlic to the tomatoes in the food processor and punch it for about 20 seconds.
- Maybe 15.
- We dont want it as smooth as sauce.
- Leave it a little chunky.
- Dice up about a 1/4 cup of red onion.
- Add the red onion to a pan with a little bit of olive oil.
- Saute over medium heat till the onions are just turning a toasted brown on the edges.
- Then pour them into a pot with the tomatoes from the food processor and stir often.
- Unwrap the sausage and dice it fine.
- Saute for about 8 minutes on high, tossing often.
- Then add it to the tomato sauce.
- Dice the basil leaves and the red bell pepper and add to the tomato sauce.
- Add your dried thyme and oregano and the rosemary.
- Top pasta with sauce and serve.
