Lazy Girl Sausage Stuffed Squash
- 1/2 Yellow Onion, Chopped
- 1/2 pounds Bulk Sausage
- 1/2 Delicata Squash (or Other Winter Squash), Chopped Into Bite Sized Pieces (see Note)
- 1 Large Red Pepper, Stem And Seeds Removed, Diced
- 1 cup Low Sodium Beef Broth
- 1 cup Quick Cooking Brown Rice
- 1/2 teaspoons Salt
- 1/4 teaspoons Black Pepper
- 1/4 teaspoons Red Pepper Flakes
- 1- 1/2 cup Day Old Bread, Chopped Into Bite Size Pieces
- 1 Tablespoon Olive Oil
- 1/4 cups Chopped Fresh Parsley

- Preheat your ovens broiler.
- 2.
- In a large skillet, saute onion and sausage over medium heat until no pink remains.
- Do not drain.
- 2.
- Add squash pieces and red pepper and saute for about 2 minutes.
- Add beef broth and bring to a boil.
- Stir in rice, salt, black pepper, and red pepper flakes.
- Cover and cook according to package directions for the rice (I used quick cooking brown rice, which took about 5 minutes).

- Meanwhile, place bread chunks on a small pan with a lip and toss with olive oil.
- Place in the preheated oven and broil for 3-4 minutes, stirring every minute, until browned and crisp.
- 4.
- To serve, spoon sausage mixture out of pan.
- Sprinkle with fresh parsley and bread crumbs or croutons.
- Note: I discovered Delicata squash for the first time this season and I absolutely love it.
- Its tender and sweet, and most importantly for this lazy girl, you can eat the skin!
- No peeling, no almost chopping your fingers off getting through that tough skin.
