Asparagus with Matzo Gremolata
- 1 bunch thin asparagus
- 2 tbsp. olive oil
- salt
- Pepper
- 1/2 c. finely crushed matzos
- 1/4 c. finely chopped fresh flat-leaf parsley leaves
- 1 clove garlic
- 1/2 tsp. freshly grated orange peel
- Toss asparagus with 1 tablespoon olive oil and 1/4 teaspoon each salt and pepper on 18" by 12" jelly-roll pan.
- Spread in single layer.
- Combine crushed matzos with remaining 1 tablespoon olive oil and 1/8 teaspoon each salt and pepper in bowl.
- Sprinkle over asparagus.
- Roast, in 450 degree F oven, 10 minutes or until browned.
- Mix parsley, garlic, and orange peel in small bowl.
- Sprinkle over asparagus.
