Asparagus with Matzo Gremolata

  1. Toss asparagus with 1 tablespoon olive oil and 1/4 teaspoon each salt and pepper on 18" by 12" jelly-roll pan.
  2. Spread in single layer.
  3. Combine crushed matzos with remaining 1 tablespoon olive oil and 1/8 teaspoon each salt and pepper in bowl.
  4. Sprinkle over asparagus.
  5. Roast, in 450 degree F oven, 10 minutes or until browned.
  6. Mix parsley, garlic, and orange peel in small bowl.
  7. Sprinkle over asparagus.
