Peach Yambake Recipe
- 1/3 c. packed brown sugar
- 3 tbsp. flour
- 1/2 teaspoon nutmeg
- 2 tbsp. butter
- 1/3 c. minced pecans
- 2 (16 ounce.) cans yams, liquid removed
- 16 ounce. can peach slices, liquid removed
- 2 1/2 c. miniature marshmallows
- Combine sugar, flour and nutmeg.
- Cut in butter till mix resembles coarse crumbs.
- Add in nuts.
- In 1 1/2 qt casserole layer 1/2 of yams, peaches, sugar mix and 1 c. marshmallows.
- Repeat layers of yams, peaches and sugar mix.
- Bake at 350 degrees for 35 min.
- Sprinkle top with remaining marshmallows.
- Broil till lightly browned.
