Quinoa Stuffed Peppers

  1. Cook onion and celery; add cumin & garlic.
  2. Stir in spinach, tomatoes, beans, quinoa, carrots and 2 cups water.
  3. Cook until quinoa is tender.
  4. Add 1 cup cheese.
  5. Preheat oven to 350F Fill each pepper with mixture, cover with foil and cook 1 hour.
  6. Uncover, sprinkle with remaining cheese and bake 15 minutes.
