Sweet Potato Bites-like Cake Topped with Apples
- 250 grams Sweet potato
- 250 ml Milk
- 50 grams Sugar
- 50 grams Butter
- 50 grams White flour
- 5 grams Baking powder
- 2 Egg
- 1 Apple
- 1 tbsp Sugar
- Slice the apple into thick pieces and simmer with sugar in a pot.
- Cover with a lid and stir occasionally.
- There's no need to add water.
- 10 minutes should be enough.
- Cut the sweet potato into small pieces (about 1 cm cubes) and heat in a separate pot along with the milk.
- Cover with a lid and heat until the potatoes are soft.
- Caution!
- Don't burn them.
- Once softened, use a wooden spatula to stir and mash the potatoes on low heat.
- It will turn into a paste like this.
- You can leave some clumps while mashing if you prefer.
- Beat the butter brought to room temperature until soft.
- Add the sugar and mix until pale.
- Gradually add the beaten egg.
- Mix in the sweet potatoes from Step 4.
- Add the flour and baking powder and stir everything together.
- Pour the mixture into the cake mold and top with the apples from Step 1.
- Bake in a 180C oven for 50 minutes.
- When an inserted skewer comes out clean, it's finished.
