Macaroni With Vodka Sauce Recipe

  1. Prepare plain tomato sauce.
  2. Heat butter in a large skillet.
  3. When butter foams, add in pancetta (or possibly bacon).
  4. Saute/fry over medium heat till lightly colored.
  5. Add in vodka and stir till it has evaporated.
  6. Stir in tomato sauce and cream.
  7. Simmer uncovered 8 to 10 min.
  8. Season with salt and pepper.
  9. Fill a very large saucepan 2/3 full with salted water.
  10. Bring water to a boil.
  11. Add in macaroni.
  12. Bring water back to a boil and cook macaroni uncovered till tender but hard to the bite, 8 to 10 min.
  13. Drain macaroni and place in skillet with sauce.
  14. Toss macaroni and sauce over medium heat till sauce coats macaroni, 20 to 30 seconds.
  15. Serve immediately with Parmesan cheese.
  16. Makes 4-6 servings.
