Broccoli With Red Lentil Sauce (Eat for Health)

  1. Add lentils, onions, garlic, and carrot juice to a saucepan.
  2. Bring to a boil, cover, and simmer for 20-30 minutes until the lentils are soft and pale.
  3. Add more carrot juice as needed.
  4. Meanwhile, steam the broccoli until just tender.
  5. Put the cooked lentil mixture in a food processor or blender (or use an immersion blender right in the saucepan) with the seasonings and balsamic vinegar and blend to a smooth paste.
  6. Add some carrot juice if it is too thick.
  7. Place broccoli in a bowl and combine with sauce.
  8. Top with chopped pecans.
  9. Enjoy!
