Cape Ann Haddock Chowder Recipe
- 1 ounce Salt Pork Finely Minced
- 1 lrg Yellow Onion Coarsely Minced
- 1 1/2 Tbsp. All-Purpose Flour
- 1 bot (8 ounce) Clam Juice
- 1 1/2 c. Lowfat milk
- 1/2 tsp Black Pepper
- 1/4 tsp Salt
- 1 lrg All-Purpose Potato Peeled and Minced
- 12 ounce Skinned and Boned Haddock Cut 1 1/2 inch Chunk
- In a large saucepan over high heat, cook salt pork for 2 min, stirring occasionally.
- Add in onion and continue cooking till softened - about 2 min more.
- Blend in flour, then gradually pour in clam juice, whisking to combine.
- Add in lowfat milk, pepper, salt, and potato and bring to a simmer.
- Reduce the heat to moderately low and simmer, uncovered, till potato is tender and soup is nicely thickened - 13 to 20 min.
- Add in haddock and cook just till fish almost flakes at the touch of a fork - about 5 min more.
