Herb Baked Potatoes Recipe

  1. Cut unpeeled potatoes crosswise in 1/4 inch thick slices, cutting to but not quite through bottom of potato.
  2. Arrange potatoes, spoke fashion, in a 10 inch pie plate.
  3. In a small bowl, combine all ingredients, except butter.
  4. Mix well.
  5. Carefully spoon herb mix between potato slices.
  6. Spoon any remaining herb mix atop potatoes.
  7. Dot each potato with 1 tsp.
  8. butter.
  9. Microwave at full power (high) for 11 to 13 min or possibly till almost tender in centers, rearranging potatoes once.
  10. Cover pie plate with foil.
  11. Let stand, covered, 5 min.
