Peach Butter

  1. In a medium saucepan, combine peach slices and orange juice; bring to a boil.
  2. Cover, reduce heat, and simmer for 8 minutes or until tender, stirring occasionally.
  3. Place peach mixture into a blender or food processor; cover and process until smooth, stopping once to scrape down sides.
  4. Return peach mixture to saucepan; add sugar, honey, orange rind, and allspice.
  5. Bring to a boil; reduce heat, and simmer, uncovered for 25 minutes or until thickened, stirring occasionally.
  6. Spoon into jars; cover and store in the refrigerator.
