Angel Hair with Bacon, Leek and Goat Cheese

  1. Cook the pasta.
  2. Before draining, set aside 1 cup of the cooking water.
  3. In a deep pan, brown the bacon (if you feel like spoiling yourself, go with prosciutto) until its just the way you like it.
  4. Remove the bacon to stop the cooking process, but leave a bit of the grease in the pan.
  5. Saute the leek and garlic in the bacon grease for about 3 mins on medium heat.
  6. Do not over cook; they burn easily!
  7. Add the wine.
  8. Add the pasta.
  9. Add the chicken broth.
  10. Add, as you mix, a little at a time, some cooking water, until the pasta are just the way you like their consistency.
  11. Season to taste with salt and pepper.
  12. Crumble with goat cheese in individual dishes.
