Lightning Fast Eggplant Parmesan
- 1/2 cups Butter, Melted
- 1/2 cups Italian Seasoned Bread Crumbs
- 1 teaspoon Dried Oregano
- 1 whole Eggplant
- 1 cup Jarred Spaghetti Sauce
- 1/4 cups Freshly Grated Parmesan Cheese
- 6 slices Mozzarella Cheese
- Preheat oven to 400 degrees.
- In a microwave safe bowl, melt butter and set aside.
- In another bowl, combine the bread crumbs and oregano and set it aside.
- Cut the eggplant into 6 slices, each 1/2 thick.
- Dip the slices in the melted butter, coating well, dredge them in the bread crumb mixture and place into a 9x13 baking dish.
- Top the slices with 2 tbsp.
- of the spaghetti sauce, 1 tbsp.
- Parmesan and 1 slice of the mozzarella.
- Bake in the oven for 15-17 minutes or until the cheese is completely melted and slightly browned.
- Remove from the oven.
- Serve and enjoy!
