Lightning Fast Eggplant Parmesan

  1. Preheat oven to 400 degrees.
  2. In a microwave safe bowl, melt butter and set aside.
  3. In another bowl, combine the bread crumbs and oregano and set it aside.
  4. Cut the eggplant into 6 slices, each 1/2 thick.
  5. Dip the slices in the melted butter, coating well, dredge them in the bread crumb mixture and place into a 9x13 baking dish.
  6. Top the slices with 2 tbsp.
  7. of the spaghetti sauce, 1 tbsp.
  8. Parmesan and 1 slice of the mozzarella.
  9. Bake in the oven for 15-17 minutes or until the cheese is completely melted and slightly browned.
  10. Remove from the oven.
  11. Serve and enjoy!
