Butcher's Croquettes
- 500 grams Potatoes
- 300 ml Water
- 1/4 tsp Salt
- 1/4 Onion
- 150 grams Ground mixed beef and pork
- 2 tsp Sugar
- 1 tbsp Sake
- 1 tbsp Mirin
- 3 1/2 tbsp Soy sauce
- 2 tsp Vegetable oil
- 50 ml Flour
- 1 Egg
- 150 ml Panko
- 1 Oil for deep frying
- Cut the potatoes into 2 cm dice.
- Put the water, salt and potatoes in a pan and bring to a boil.
- Cook the potatoes over low-medium heat until tender.
- (About 6 minutes.)
- Drain off the water, put the pan of potatoes back on the heat, and evaporate the moisture on them so they become floury all over while shaking the pan.
- Mash the potatoes.
- Heat up a frying pan, add the vegetable oil and saute the chopped onion until transparent.
- Add the ground meat and cook until it changes color.
- Add the ingredients, and cook over high heat until the liquid is reduced by half.
- Add the meat mixture from step 5 into the mashed potatoes liquid and all, and mix well.
- When the mixture has cooled down enough to handle, form into oval patties.
- Coat with flour, then beaten egg, then panko.
- Deep fry until golden brown and crispy in 170C (338 F) or so oil.
