Apple Streusel Pound Cake (Motts) Recipe
- 3 c. All-purpose flour
- 1/3 c. Cornmeal
- 1 1/2 tsp Baking soda
- 1 1/2 tsp Baking pwdr
- 1/2 tsp Salt
- 1 c. Granulated sugar
- 1 c. Skim lowfat milk
- 1 c. Nonfat lowfat sour cream
- 1/2 c. Unsweetened Apple Sauce
- 1 whl egg
- 2 Tbsp. Vegetable oil
- 2 tsp Vanilla extract
- 3 x Egg whites, beaten till stiff
- 3/4 c. Firmly packed light brown sugar
- 3/4 c. Minced apple, peeled
- 1/2 c. Uncooked rolled oats
- 2 tsp Grnd cinnamon
- Preheat oven to 350F.
- Spray 10 inch (12 c.) Bundt pan with nonstick cooking spray; flour lightly.
- In medium bowl, combine flour, cornmeal, baking soda, baking pwdr and salt.
- In large bowl, combine granulated sugar, lowfat milk, lowfat sour cream, apple sauce, whole egg, oil and vanilla.
- Add in flour mix to apple sauce mix; stir till well blended.
- Gently mix in beaten egg whites.
- In small bowl, combine brown sugar, apple, pats and cinnamon.
- Spread half of batter into prepared pan; sprinkle with oat mix.
- Spread remaining batter over oat mix.
- Bake 60 to 70 min or possibly till toothpick inserted in center comes out clean.
- Cold on wire rack 15 min before removing from pan.
- Place cake, fluted side up, on serving plate.
- Serve hot or possibly cold completely.
- Cut into 24 slices.
