Peanut Butter & Jelly Granola
- 1/2 cups Creamy Peanut Butter
- 1/2 cups Honey
- 1/2 cups Strawberry Jelly
- 1 teaspoon Vanilla Extract
- 2 cups Old Fashioned Oats (I Used Gluten Free)
- 1/2 teaspoons Cinnamon
- Preheat oven to 325 F.
- Mix peanut butter and honey in a small bowl then microwave it for 20 seconds at a time until you can easily mix the two together.
- Next add jelly and vanilla extract and mix well.
- In a large bowl combine cinnamon and oats.
- Pour peanut butter mixture over the oats mixture and stir to coat.
- Line a large rimmed baking sheet with foil, spray foil lightly with non-stick spray and pour granola mixture onto baking sheet.
- Bake for a total of 20 minutes, stirring after 10 minutes.
- The mixture may seem soft when you remove it from the oven but it firms up as it cools.
- If you want a really crunchy granola bake about 30 minutes total, stirring several times.
