Basil Shrimp And Broccoli Stir-Fry
- 1 Tbsp. oil
- 3/4 lb. shelled, deveined shrimp or frozen shrimp
- 2 c. frozen broccoli cuts
- 1 medium red bell pepper, cut into thin 2-inch strips
- 1/2 c. snow peas
- 1/2 c. fresh mushrooms
- 1/4 c. water chestnuts
- 1/2 c. boiling water
- 2 tsp. chicken flavor instant bouillon
- 1/4 c. cold water
- 1 Tbsp. cornstarch
- 1 tsp. dried basil leaves
- 1 tsp. lemon juice
- 1/2 c. sliced green onions
- Heat oil in large skillet on medium heat.
- Add shrimp. Stir-fry about 4 minutes or until shrimp are pink.
- Remove to serving dish.
- Add all vegetables except green onions.
- Stir-fry until crisp-tender.
- Combine boiling water and bouillon.
- Stir to dissolve.
- Combine cold water, cornstarch, basil and lemon juice. Stir well.
- Add to vegetables in skillet.
- Cook and stir until thickened.
- Add green onions and shrimp.
- Heat until shrimp are warm.
- Makes 4 servings.
