Microwave Ready Bake Bran Muffins Recipe
- 3 c. whole bran cereal
- 1 c. boiling water
- 2 Large eggs, lightly beaten
- 2 c. buttermilk
- 1 c. salad oil
- 1 c. raisins or possibly other dry fruit
- 2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 c. sugar
- 2 1/2 c. all-purpose flour
- This is a make-ahead batter which can be stored in the refrigerator for up to two weeks.
