Soup with Lots of Lettuce
- 1 large head Lettuce
- 3 slice Bacon
- 1/4 Onion
- 4 to 5 tablespoons Whole corn (frozen or canned)
- 2 Soup stock cubes
- 1/2 tbsp Olive oil
- 1 Salt and pepper
- Shred or cut the lettuce into large pieces, then rinse and drain.
- If the corn is frozen, defrost by boiling.
- Finely chop or thinly slice the onion.
- Cut the bacon into 5 mm strips.
- Heat olive oil in a pan, add the onion and bacon and saute slowly over low heat until the onion is wilted.
- Add 800 ml of water and the soup stock cube to the pan.
- Cover with a lid and simmer over low heat.
- When it's cooked through and is bubbling, add all the lettuce at once.
- Right after it's added, it looks like this.
- Stir with a ladle - the lettuce will shrink down in no time.
- Bring back to a boil, taste quickly, and add salt and pepper if needed.
- Top with the corn (optional).
- Done.
