Soup with Lots of Lettuce

  1. Shred or cut the lettuce into large pieces, then rinse and drain.
  2. If the corn is frozen, defrost by boiling.
  3. Finely chop or thinly slice the onion.
  4. Cut the bacon into 5 mm strips.
  5. Heat olive oil in a pan, add the onion and bacon and saute slowly over low heat until the onion is wilted.
  6. Add 800 ml of water and the soup stock cube to the pan.
  7. Cover with a lid and simmer over low heat.
  8. When it's cooked through and is bubbling, add all the lettuce at once.
  9. Right after it's added, it looks like this.
  10. Stir with a ladle - the lettuce will shrink down in no time.
  11. Bring back to a boil, taste quickly, and add salt and pepper if needed.
  12. Top with the corn (optional).
  13. Done.
