Dinner Chowder
- 2 cups potatoes diced
- 3/4 cup onions minced
- 1/2 cup celery diced
- 2 1/2 teaspoons salt
- 2 1/2 cups water boiling
- 4 tablespoons corn oil
- 4 tablespoons flour, all-purpose
- 1/4 teaspoon black pepper
- 1/2 teaspoon dry mustard
- 1 1/2 teaspoons sauce
- 2 cups milk
- 1 cup cheddar cheese grated
- 1 tablespoon parsley leaves minced
- 1 cup tomatoes drained, chopped
- Combine potatoes, onion, celery, salt and boiling water in a deep kettle.
- Simmer until tender, about 15 minutes.
- Heat oil and stir in flour until smooth.
- Add the next four ingredients while stirring.
- Cook until thickened.
- Add cheese and stir all into the potato mixture.
- Add parsley and tomatoes.
- Heat through but not boil.
