Turkey Casserole Christmas in April
- 1 tablespoon olive oil
- 1 small onion, chopped
- 3 celery ribs, chopped
- 1 jalapeno, chopped
- 1 teaspoon dried sage
- 14 teaspoon salt
- 14 teaspoon fresh ground pepper
- 2 tablespoons flour
- 2 cups chicken broth
- 2 cups cooked turkey, cubed
- 2 cups left over sausage prepared stuffing
- Preheat oven to 400f degrees.
- Heat oil in a nonstick frypan; add onions, celery, jalepeno and sage.
- Saute just until the onion starts to turn brown.
- Season with salt and pepper, sprinkle with flour, saute for about 2 minutes.
- Add broth, bring to boil, reduce heat and simmer until thickened, about 5 minutes.
- Add turkey, stir to combine; pour mixture into a casserole.
- Top mixture with sausage stuffing.
- Bake on middle rack of oven for about 30 minutes or until bubbly and the top is well browned.
