Easy Chicken Enchiladas

  1. Heat oven to 350 degrees F.
  2. Cook and stir onions in hot oil in large skillet on medium heat 4 to 5 minutes or until crisp-tender.
  3. Stir in chicken, tomatoes, 3/4 cup cooking creme and shredded cheese.
  4. Spoon about 1/3 cup chicken mixture down center of each tortilla; roll up.
  5. Place in 13- by 9-inch baking dish sprayed with cooking spray; top with remaining cooking creme.
  6. Cover.
  7. Bake 15 to 20 minutes or until heated through.
  8. Each serving contains: 25%DV vitamin A, 15%DV vitamin C, 30%DV calcium, 20%DV iron.
