Thai Kale Bean Salad
- 14 cup rice vinegar
- 3 tablespoons thai peanut sauce
- 2 carrots
- 1 bunch kale, approx. 6-8 leaves
- 1 lb pinto beans (large can)
- 14 cup cilantro (about 8 stalks)
- 1 avocado
- 1 bunch green onion
- 1 lime
- Chop kale, carrots, cilantro, avacado and green onions.
- Place into bowl.
- Add rice vinegar, peanut sauce, pinto beans, and the lime juice.
- Stir all ingredients until mixed and serve.
