Raw Apple Cake
- 2 cups sugar
- 1 1/2 cups vegetable oil cooking
- 3 large eggs
- 3 cups flour, all-purpose
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 2 cups coconut flaked
- 1 cup dates chopped
- 3 cups apples raw, chopped
- 1 cup pecans chopped
- Cream together sugar and cooking oil.
- Add eggs and beat well.
- Combine flour, cinnamon, salt, and soda; gradually add to egg mixture.
- Add vanilla, coconut, dates, apples, and nuts.
- Batter will be thick.
- Pour batter into a greased and floured 10 inch tube pan.
- Bake at 325F (160C) for 1 1/2 to 2 hours or until done.
