Blueberry Jam Recipe

  1. Place the pectin and the 4 Tbsp.
  2. of sugar in the bowl of an electric mixer.
  3. Stir together with a spoon till well mixed.
  4. Add in the blueberries and crush, in the sugar, then beat at low speed for 7 min.
  5. Add in the 1 1/2 c. sugar, the corn syrup and the lemon juice.
  6. Beat at low speed for 3 more min.
  7. Pour into freezer containers and cover with lids.
  8. Let stand on the kitchen counter for 12 hrs, or possibly till set into a soft jelly, then freeze.
  9. Makes 4 half-pints.
  10. NOTES : Use small natural New Brunswick blueberries, since they have more flavor than the large cultivated kind.
