Cranberries in the Sun

  1. Drain mandarin oranges, reserving 1 tablespoon liquid.
  2. Whip cream; fold in rice, orange peel, and mandarin oranges.
  3. Chill.
  4. In small saucepan, break up cranberry sauce; stir in sugar, cornstarch, lemon juice, and reserved mandarin orange syrup.
  5. Cook and stir until mixture is thickened and bubbly.
  6. Cool sauce to room temperature.
  7. Spoon mounds of rice mixture on lettuce leaves.
  8. Halve orange slices and arrange around mounds.
  9. Spoon cranberry sauce on top.
