Cranberries in the Sun
- 11 ounces canned mandarin orange sections
- 12 cup whipping cream
- 1 cup cooked rice
- 14 teaspoon orange peel, shredded
- 8 ounces jellied cranberry sauce (1 cup)
- 1 tablespoon sugar
- 1 teaspoon cornstarch
- 1 tablespoon lemon juice
- 1 large orange, peeled and sliced 1/4 inch thick
- 4 -8 lettuce leaves
- Drain mandarin oranges, reserving 1 tablespoon liquid.
- Whip cream; fold in rice, orange peel, and mandarin oranges.
- Chill.
- In small saucepan, break up cranberry sauce; stir in sugar, cornstarch, lemon juice, and reserved mandarin orange syrup.
- Cook and stir until mixture is thickened and bubbly.
- Cool sauce to room temperature.
- Spoon mounds of rice mixture on lettuce leaves.
- Halve orange slices and arrange around mounds.
- Spoon cranberry sauce on top.
