Lasagna Roll Ups
- 1 lb lean ground beef (or turkey)
- 1 sweet yellow onion (diced)
- 1 orange bell pepper (diced)
- 3 carrots (finely diced)
- 5 clove of garlic (minced)
- 1 tsp dried basil
- 1/2 tsp dried oregano
- 1 Salt & Pepper (to taste)
- 1 can of crushed tomatoes (28 oz)
- 1 can of diced tomatoes (28 oz)
- 1 can of tomato sauce (15 oz)
- 1 cup beef stock
- 1 cup grated mozzarella
- 4 tbsp shredded parmesan
- 1 container ricotta cheese (30-32oz)
- 2 cup finely chopped spinach
- 2 eggs
- 4 tbsp finely chopped parsley

- In large soup pot combine meat and onions.
- Cook for 5 minutes.
- Add bell pepper, garlic, Basil, oregano, salt and pepper.
- Cook another 5 minutes.
- Add broth, tomato sauce, crushed tomatoes, and diced tomatoes.
- Bring to simmer for about an hour.
- (Optional: I have thrown in red pepper flakes for some kick)
- Once sauce has simmered for an hour cook lasagna noodles as directed on box.
- Lay noodles on wax paper to cool.
- Preheat oven to 350.
- In a bowl combine and mix all ingredients for the filling.
- Scoop and place lengthwise in middle of noodle.
- Roll up and place seam side down in baking dish ladled with sauce.
- Top with additional sauce and parmesan cheese.
- Bake covered for 15 minutes.
- Uncover and bake for an additional 10 minutes.
- Serve with salad and French bread.
