Roast Beef Italiano
- 4 to 5 lb. beef chuck roast
- 1 garlic bud
- 1 c. diced green pepper
- 1 c. diced onion
- 1/2 c. tomato catsup
- 1 Tbsp. horseradish
- 1 c. water
- 1 Tbsp. oregano
- 1/2 tsp. chili powder
- 1/8 tsp. marjoram
- 1/2 tsp. celery salt
- 1/2 tsp. salt
- dash of pepper
- ripe olives, tomatoes and parsley for garnish
- Roll roast in flour; brown in hot oil.
- Place in heavy roaster pan.
- Add all dry seasonings.
- Top roast with sliced garlic bud, diced onion, green pepper, horseradish and catsup, then add 1 cup water around meat.
- Cover roaster.
- Place in 350u0b0 oven for 3 to 4 hours, until very tender.
- Garnish with ripe olives, tomato wedges and parsley.
