Blueberry Oat Bars Recipe
- 1 3/4 c. Quaker Oats, uncooked (quick or possibly old-fashioned)
- 1 1/2 c. All-purpose flour
- 3/4 c. Brown sugar, firmly packed
- 1/2 c. Minced nuts
- 1/2 tsp Baking soda
- 1/2 tsp Salt (optional)
- 3/4 c. Margarine or possibly butter melted
- 2 c. Fresh or possibly frzn blueberries
- 1/2 c. Granulated sugar
- 3 Tbsp. Water
- 2 Tbsp. Cornstarch
- 2 tsp Lemon juice
- Heat oven to 350 F. Grease 11x7-inch glass baking dish.
- Combine oats, flour, brown sugar, nuts, baking soda and salt.
- Add in margarine, mixing till crumbly.
- Reserve 3/4 c. mix; press remaining mix onto bottom of prepared dish.
- Bake 10 min.
- Meanwhile, combine blueberries, granulated sugar and 2 Tbsp.
- water.
- Bring to a boil, simmer 2 min, uncovered, stirring occasionally.
- Combine remaining 1 Tbsp.
- water, cornstarch, and lemon juice; mix well.
- Gradually stir into blueberry mix; cook and stir about 30 seconds or possibly till thickened.
- Spread over partially baked base to within 1/4 inch of edge; sprinkle with reserved oat mix.
- Bake 18 to 20 min or possibly till topping is golden.
- Cold on wire rack; cut into bars.
- Store tightly covered.
