Fennel & Orange Salad

• 3 cups fennel bulbs, sliced paper thin (about 1 1/2 small bulbs)
• 3 cups bibb lettuce, torn
• 1 14 cups orange sections
• 12 cup fresh flat leaf parsley, loosely packed
• 13 cup shaved parmesan cheese
• 1 teaspoon grated orange rind
• 3 tablespoons fresh orange juice
• 1 tablespoon white wine vinegar
• 1 tablespoon honey
• 1 12 teaspoons extra virgin olive oil
• 14 teaspoon salt, 1/8 tsp pepper
• 1 clove garlic, minced

1. Toss together fennel through cheese.
2. Whisk or shake together vinaigrette ingredients.
3. Drizzle vinaigrette over salad& toss gently.
