Red Beans and Rice

  1. Soak beans overnight in cool water.
  2. In a large sauce pot, over medium heat, brown the pork in the pork fat.
  3. Add the celery, onion and bell peppers and let sweat until lightly brown.
  4. Season with salt and red pepper flakes.
  5. Stir in the tomato paste and garlic.
  6. Add the chicken stock and beans.
  7. Reduce heat to low and simmer until beans are tender and thick.
  8. Season with salt, to taste and stir in the hot sauce, vinegar and green onions.
  9. For the green rice:
  10. In a food processor add the herbs, oil and a pinch of salt.
  11. Add the rice and water to a rice cooker and season with salt, to taste.
  12. When cooked, fluff the rice and stir in the herb mixture.
  13. Transfer the beans to a serving bowl or platter and serve with the green rice.
