Dipped Peanut Butter Cookies

  1. In a mixing bowl, combine peanut butter, milk, egg and vanilla; beat until smooth.
  2. Stir in biscuit mix; mix well.
  3. Cover and refrigerate for 1 hour.
  4. Shape into 1" balls and place 1" apart on ungreased baking sheets.
  5. Flatten each ball with the bottom of a glass.
  6. Bake at 350 for 8-10 minutes or until golden brown.
  7. Cool on wire racks.
  8. In a small saucepan over low heat, melt the chocolate chips and shortening.
  9. Dip each cookie halfway into chocolate; shake off excess.
  10. Place on waxed paper-lined baking sheets to harden.
