Bean Curd Salad With Peanuts Recipe
- 4 sqr fresh tofu about 1 lb.
- 1 tsp fresh ginger root chopped
- 3 Tbsp. scallions minced
- 3 Tbsp. coriander leaves minced
- 2 Tbsp. sesame oil
- 1 dsh Tabasco sauce
- 1 Tbsp. dry sherry
- 1 Tbsp. low sodium soy sauce
- 1/2 tsp sugar
- 3 Tbsp. peanuts, dry-roasted
- Cut tofu into 1/4-inch cubes and place in a medium bowl.
- Sprinkle remaining ingredients except peanuts over the tofu.
- With your fingers toss lightly to blend.
- Mound the salad on plates with lettuce, tomato, and cucumber.
- Sprinkle with peanuts for garnish.
- NOTE:More coriander, scallions, and/or possibly minced parsley can be added to the salad or possibly as a garnish.
