No-Cook Orange Marmalade

  1. Rinse clean plastic containers and lids with boiling water.
  2. Dry thoroughly.
  3. Use sharp knife to score peel on each orange into 4 pieces.
  4. Remove peel; set aside.
  5. Chop fruit; place in small bowl.
  6. Trim and discard white membranes from peels.
  7. Cut peels into thin strips.
  8. Place 1-1/4 cups orange peel in medium saucepan.
  9. Add water.
  10. Bring to boil; cover.
  11. Simmer on medium-low heat 15 min., stirring occasionally.
  12. Remove from heat.
  13. Add chopped oranges with their juices; mix well.
  14. Measure 4 cups fruit mixture into separate bowl.
  15. Stir in lemon juice.
  16. Combine pectin and 1/4 cup sugar.
  17. Gradually add to fruit mixture, mixing well after each addition.
  18. Let stand 30 min., stirring frequently.
  19. Add remaining sugar; stir 3 min.
  20. or until dissolved.
  21. Fill all containers immediately to within 1/2 inch of tops.
  22. Wipe off top edges of containers; immediately cover with lids.
  23. Let stand at room temperature 24 hours or until set.
  24. Jam is now ready to use.
  25. Store in refrigerator up to 3 weeks, or freeze extra containers up to 1 year.
  26. If frozen, thaw in refrigerator before using.
