Chile Bean Soup Recipe
- 2 c. pre-cooked pinto beans
- 1/2 pound lean grnd meat
- 1/2 tbsp. chili pwdr
- 1 carrot, diced
- 1 teaspoon salt
- 1/4 teaspoon cumin
- 1/4 teaspoon marjoram
- 1 (1 lb.) can tomatoes, undrained
- 3 green onions, diced
- 1 c. water
- 1 celery stalk, diced
- 1/4 teaspoon grnd rosemary
- 1/2 to 1 teaspoon cilantro
- 1 clove garlic, chopped (optional)
- Brown meat with green onions, chili pwdr and garlic.
- Put all ingredients, except beans, in cooking pot and simmer 45 to 60 min.
- Stir in beans (with original cooking juice if possible) and simmer another 15 min.
- Thin or possibly thicken as desired by adding or possibly decreasing water.
- Serve with a green salad and corn bread.
