Pizza-Pied Nachos

  1. Preheat oven to 400 degrees.
  2. Spray a large baking sheet or ovenproof platter with nonstick spray and set aside.
  3. Break each string cheese stick into thirds and place in a blender or food processor -- blend at high speed until shredded/grated.
  4. (Or tear into pieces and roughly chop.)
  5. Set aside.
  6. To make the chips, stack tortillas and cut in half.
  7. Cut each stack of halves into 3 triangles, for a total of 36 pieces.
  8. Evenly lay tortilla triangles flat on the sheet or platter, and cover with a generous mist of nonstick spray.
  9. Sprinkle with a dash of salt.
  10. Flip triangles and sprinkle with another dash of salt.
  11. Bake in the oven for 5 minutes.
  12. Carefully flip triangles and bake until crispy, about 5 minutes longer.
  13. (Leave oven on.

  15. Meanwhile, bring a skillet sprayed with nonstick spray to medium-high heat on the stove.
  16. Add veggies and, stirring occasionally, cook until slightly softened, about 5 minutes.
  17. Reduce heat to low.
  18. Add pizza sauce and garlic powder.
  19. Mix well and continue to cook until hot.
  20. Evenly top chips with sauce.
  21. Sprinkle with Parm-style topping and shredded/grated cheese.
  22. Top with turkey pepperoni.
  23. Return to the oven until cheese has melted, about 5 minutes.
  24. Enjoy!
