Pineapple Pecan Loaf Bread Recipe
- 1/4 c. shortening
- 3/4 c. firmly packed brown sugar
- 1 egg
- 2 c. flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 c. frzn orange juice concentrate (thawed and undiluted)
- 1 (8 ounce.) can undrained crushed pineapple
- 1/2 c. minced pecans
- Cream shortening - add in sugar; beat well.
- Add in egg, beat well.
- Combine soda, flour and salt.
- Add in to creamed mix with orange juice.
- Begin and end with flour mix.
- Stir in pineapple and pecans.
- Bake in greased and floured loaf pan.
- 350 degrees about 50 min.
