Biggest Loser Veggie Tuna Wraps

  1. Steam the broccoli for one minute, or until crisp-tender.
  2. Drain and rinse under cold water immediately.
  3. Pat dr, and chop finely.
  4. Mix everything but the tortilas and spinach together in a medium bowl.
  5. Place on tortilla on a plate.
  6. Place half the tuna mixture on the tortilla, and top with half the spinach leaves.
  7. Starting at the filled end, roll the tortilla tightly into a tube.
  8. Repeat with remaining ingredients.

broccoli florets, light tuna, red bell pepper, yellow bell pepper, green bell pepper, onion, light red wine vinaigrette, brown mustard, whole wheat tortillas, fresh spinach leaves
